Day 8 : BBQ Portobello Mushroom Burger


One thing I have always struggled with, is finding the perfect BBQ sauce. I have eaten out at tons of places but have never found that one BBQ sauce  that trumps all others! So today, I decided to make it myself and use it in a burger!

I found a recipe online for St Louis BBQ sauce  and made a glaze (I used tiny portions since it was just being used as a marinade) for a delicious BBQ Portobello Burger.

Recipe:

for the glaze:

3 tablespoons ketchup

3 tablespoons water

1 1/2 teaspoon apple cider vinegar

1 teaspoon brown sugar

1/2 teaspoon yellow mustard

pinch of onion powder

pinch of garlic powder

generous pinch of cayenne pepper

red chilli flakes

Directions: – Mix all ingredients together and leave in the fridge for 2-3 hours. bring it out when you’re ready to cook your veggies.

for the burger:

1 Large Portobello mushroom (remove stem )

1/2 zucchini thinly sliced

1-2 large slices of tomato

red onion ( garnish)

fresh spinach

grilled vegetable spice (can be found at any grocery store)

vegetable stock

Burger buns

Directions:

1 hour before cooking- generously lather Portobello mushroom with BBQ sauce and leave it in the fridge to sit.

Pre heat Oven to 250 degrees. put marinaded mushroom , zucchini, onion & tomato on a roasting tray, sprinkle grilled vegetable spice and a tiny bit of vegetable stock over veggies and allow to roast. Leave for 15 minutes, making sure to flip the veggies over at least once.

The mushroom & zucchini will take a little longer than the other veggies; so even if you take the rest , leave the mushroom and zucchini in for an extra 5-7 minutes, or till they are nice and soft.

once the veggies are all done – pile onto your bun, add the fresh spinach- and enjoy! (I put a little bit of red pepper mayo on my burger bun as a condiment)

Portobello mushrooms and BBQ sauce really do go well together, and the roasted vegetables and fresh spinach add a lot of nutrition and juicy flavor to the meal. I’m sure this is one that even non vegetarians will enjoy!
