Day 6 – Veggie Burrito’s!

I love Sundays!

Though I was working today, I had time to run down to the market and pick up some black beans and corn tortillas to finally make the burrito’s I have been craving all week!! The only problem; these burritos are so good and so filling, they cause serious Mexican food-coma! Do not try this recipe if you have any work to do after!

Heres how they’re made:

Recipe (This makes 4 Burritos – so portion according to how many people you are serving)

2 Yam

A cup full of black beans (for a quicker burrito used the canned stuff)

Half a cup of corn (again, the canned stuff)

1 red onion

1 green bell pepper

Garlic

Salt

pepper

1 tablespoon Chipotle sauce (you can use the spice instead)

Paprika

Cayenne pepper

Fresh Jalapeno pepper (optional for garnish)

Corn Tortillas (Sorry, I get them ready made- no idea how to make em)

Directions:

Chop the Yam and leave to boil (some people leave the skin on for added fiber, personally I prefer it without the skin). At the same time, start on the garnish – pour a tiny bit of olive oil on a frying pan – chop red onion & green bell pepper into long thin slices and toss them in once the pan has heated up. Sprinkle a pinch of salt, a pinch of pepper and a pinch of cayenne pepper on the onion mix and leave to sweat (the veggies should brown but should still be crisp).

drain black beans and leave in a small pan to heat and soften (for more flavour, roughly chop the beans).

Once the Yam are boiled (i.e, soft and easy to mash), turn off the heat & throw in the corn, some ground garlic, pinch of salt, pinch of paprika, pinch of cayenne, and a tablespoon of chipotle sauce. Mash together till all the flavours are infused in the mix. Right at the end, toss in the heated black beans and mix again !

finally, bring out the Tortilla’s (lightly toasted, just the way I like) and scoop the Yam & Beans and stuff in as much as you’d like , the more the messier! Next, stack the onions and green peppers on top and finally (for those who like it hot)- chop some fresh jalapenos and sprinkle on top! ( I took the picture and forgot the jalapeno’s – only remembered after the first bite so they can’t be seen in the image- but they were a great addition to the meal-  highly recommend you try them out provided you can handle the heat)

  umm.. I’m not a very good burrito wrapper :s

For the non-vegans; you may enjoy this more with some sour cream. So feel free to throw some on!
