Day 4 – Corn & Red Pepper Chipotle Soup

Because I will be working late tonight and will be having dinner with some co–workers, I ran home early for lunch and put together a recipe to blog about (And also to eat).  Heres what I made :

Sweet Corn & Red Pepper Chipotle Soup:

1 can sweet corn OR 3 cobs fresh corn (I used canned corn)

1 tablespoon olive oil

1 / 2 small onion

1 /2 chopped roasted red pepper

1/4 teaspoon chipotle powder

1 tablespoon vegan butter

1 tablespoon flour

1 cup vegan friendly milk

1 cup water

salt and freshly ground pepper

1 fresh red chilli pepper (Optional/ if you like spice)

Roast red pepper on oven top till it softens. Chop into desired size.  finely chop onion – Sweat the onion in olive oil. Add corn to the onion along with the chipotle powder and a 1/4 teaspoon of salt and roasted red pepper. Continue sweating for 5 minutes.

Melt vegan butter in to the corn and sprinkle the mixture with flour. Stir the flour in until well absorbed. Continue cooking for another 3 minutes. Slowly Stir in the vegan friendly milk and water and bring to a gently simmer. (This is where you can add the really finely chopped red chilli) Simmer for 15 minutes, stirring regularly and making sure the bottom doesn’t scald. After 15 minutes start testing the corn, you want it to be quite soft. When very soft, turn off the heat and allow to cool ( just enough for you to put it in the blender).

I like my soup creamy – but if you like it a little chunky, then be sure not to blend for too long. The flavours in the soup come out more when you blend it- but you can keep watching to make sure you reach the right texture for your taste. once it’s reached the perfect texture, squeeze some lime on top and serve! (I threw some dried chillies on top, too for extra spice)

Anyhow- This Mexican inspired soup put me in the mood for more Mexican food; so tomorrow I’ll be cooking up a vegan yam burrito!
