Day 2 and the dreaded daal (lentil stew)

It’s day 2 of the No Meat November Challenge! Yesterday was a breeze. Today, though, I decided to face my arch nemesis- lentils! For years I have been struggling with the inability to cook lentils. I don’t know what it is that I had been doing wrong this whole time; but they always turned out terrible! One of my favourite vegetarian Pakistani/Indian meals has always been Daal with rice – Today- I decided , no matter what happens.. I will make a decent tasting bowl of daal. Somehow… I did! picture evidence provided below!

Here is the recipe I used:

1 1/2 cup red lentils ( masoor dal )

2 cups water

1 cup vegetable broth

1 chopped onion

2 small or 1 medium tomato

1 hot green chilli pepper

1 teaspoon oil

1 clove garlic finely chopped

ginger

1 teaspoon cumin seeds

1/4 teaspoon turmeric powder

salt and lime juice to taste

Directions:

Wash the lentils and set to cook with 2 cups water & 1 cup vegetable broth (the broth is optional but adds flavour).  Heat the oil in a pan. Add the cumin seeds, ginger, garlic, chopped onion and chopped pepper. Heat till the onions are translucent . add the cooked and lentils, turmeric powder, chopped up tomato and salt.  Bring to a boil and allow all the liquid to evaporate leaving behind a thick lentil stew. Add a squeeze of fresh lime on top &  Serve over hot rice.  This is really easy , low in fat, full of protein & iron- and oh yeah, it tastes delicious!!
