Day 1 & Apple Quinoa Cake!

So, It’s the first day of the No Meat November Challenge! So far it has been great! Had a mixed fruit smoothie and oatmeal bar for breakfast, and a put together a cheese-less grilled veggie pizza for lunch and dinner (I will put up the recipe & pictures as soon as I find my camera chord)

Either way, as promised, today I am uploading one of my all time favorite recipes: Apple Quinoa Cake.

Quinoa is one of those amazing grains that doesn’t get enough publicity ! it is high in protein, Calcium & iron and is a source of Vitamin E and some of the B Vitamins- and is filled with amino acids. The thing I really love about Quinoa is that it’s easy to cook, takes on absolutely any flavor and keeps you full for hours!

Now the recipe I’m uploading here I’ve only made once- usually, I use another recipe which includes eggs and rum. But since No Meat November was coming up, I tried something new and was pleasantly surprised at just how delicious it turned out! The cake was moist and rich and not overwhelmingly sweet. It’s great to have as a breakfast food as it’s packed with energy & is extremely filling.

As for the recipe itself, The only thing to make sure of is that if you decide to use ‘cooked quinoa’, you must sift and wash the seeds thoroughly and cook them for 12-15 minutes and no longer. You can find ready made Quinoa at any Whole Foods or health food store – and alternatively , you can use cooked Quinoa flakes (they take less time to prepare and are lighter).

Here is the recipe:

APPLE QUINOA CAKE

3/4 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large apple, cored and coarsely grated
(optional- 1 large apple thinly sliced for decoration)
1/4 cup palm sugar
1/4 cup olive oil
1 cup cooked quinoa (1/3 cup uncooked quinoa)
1 teaspoon vanilla extract
3 tablespoons sunflower seeds
1/4 cup raisins
Preheat oven to 180C/350F. Grease or line a loaf tin with parchment paper.In a large bowl, sift together flour, palm sugar, baking powder, soda, ginger, cinnamon and salt. Set aside.
In a medium bowl, mix the grated apple, oil, quinoa, vanilla, sunflower seeds and raisins. Add wet ingredients to dry ingredients and stir until combined.

Pour into prepared pan and smooth the top. Bake for 30-40 minutes, until cake tester comes out clean. Let cool before cutting into slices. AND ENJOY !!
